Add noodles into boiling water for 4 minutes. Drain water then set aside.
In the same pot, boil a bowl full of water (approximately 350ml). Add 1 tsp of dashi stock powder and some shredded mushroom. Cook for 2 minutes, or until mushrooms are soft.
Add noodles into the broth. Remove from heat. Garnish with a pinch of shredded seaweed and fried shallots. Serve immediately.
This noodle soup has rich, bonito-flavoured broth with delicate noodles, accompanied by mushrooms, seaweed, and fried shallots. We encourage you to add other ingredients such as dumplings or veggies to make this dish your own. Sprinkle some Japanese Spice Blend (Shichi-mi Tōgarashi) for added spicy kick.
