- Cook 1 x noodle into boiling water for 4 minutes. Drain water then set aside.
- Bring 350ml of water to boil. Add 1 tsp of dashi and a small handful of sliced mushrooms. Cook for 2 minutes, or until mushrooms are soft.
- Add noodles into the broth. Remove from heat. Garnish with a pinch of shredded seaweed and fried shallots. Serve immediately.

Really enjoyed the soup! I added in some tofu knots which was lovely (for novices like me though make sure they’re cooked through! ). The real winner was the bonito dash! Chef’s kiss this is good! Added some to my rice for onigiri 🍙 too! I think seaweed and dried shallots were really nice, but for five serves might not be enough unlike the dried mushrooms which were ample!
Would prefer optional daschi flavours
Plus, suggestions for recipe additions eg., greens, dumplings?

I loved everything except the mushrooms. It’s a texture thing, but I can’t eat them. Other flavours, like your ramen kits would be appreciated.
Each Kit Contains
- 5 pcs of Dried Noodles
- 20g of Dried Shiitake Mushroom Slices
- 20g of Fried Shallots
- 5g of Shredded Seaweed
- Your choice of Bonito Dashi 60g or Kombu Dashi 60g
