Dried Black Fungus is typically used in Chinese and Malaysian cooking and is also used as traditional Chinese medicine. Known for its chewy texture, Dried Fungus is neutral in taste and can therefore take on various flavours. It needs to be reconstituted before using. Simply soak in hot water for 1 hour, then wash before cooking. It expands into 3 to 4 times its size after reconstituted. 1 serve is approximately 50g. You can find whole Dried Fungus here.

Soak in hot water for about 1 hour or until softened or soak in cold water overnight. Wash black fungus under running water, pat dry and remove the stems. Tear or cut them into smaller pieces if necessary. Cook as intended.
