Dried shrimps are commonly used in many Asian cuisines to add umami flavour to dishes. One of its most popular use is to make Cantonese XO Sauce, but can also be used in stir-fries and braised dishes, soups, salads and dumplings. Rinse and soak before use to rehydrate the shrimps.

How to Use

Soak in hot water for about 1 hour or until softened or soak in cold water overnight. Wash black fungus under running water, pat dry and remove the stems. Tear or cut them into smaller pieces if necessary.
