To prepare somen, add somen noodles to boiling water for about 3 to 4 minutes. Stir with wooden chopsticks occasionally to prevent them from sticking together. Remove noodles from the pot then rinse noodles with cold water. Put noodles into a bowl then add toppings such as vegetables, kimchi and broth / dipping sauce.

I like how silky it is and how it is already salty itself so matches a variety of veggies perfectly. It also matches the soy mince! Rinse the noodles with cold water after boiling to keep it a little bit chewy. If you don't want to rinse it, put the bowl in the fridge to make it cold, and put the noodles in this cool bowl when the noodles is done.
