To make authentic sushi, one must first perfect the art of cooking rice. Using Japanese short grain rice is ideal due to its fluffy yet sticky nature, which allows the bed of rice to be held together. The rice we have is called Koshihikari (or Koshi rice) which is delicate and has the best texture for making sushi. To make a sushi roll, you'll need approximately 75g of rice.
