My cooking let them down.

These noodles deserved better.
They arrived full of hope, silky, confident, a little cocky even.
And what did I do?
Overcooked the egg. Used the sad end of the spring onion. Forgot the chilli oil.
It wasn’t their fault. The broth still had depth. The chew was still there.
But I know they were capable of greatness.
Next time, I’ll rise to meet them.

Excellent!

These noodles are really good, they are air fried, which is awesome, most dried noodles are fried in palm oil first. This is so much better. You might need 2 squares or serve each person as it's less than what you may be used to, but that fine with me.
