Coriander Seeds

Toasting or heating the seeds in a dry skillet intensifies the flavor, aroma, and pungency.  Coriander seed is a key component of garam masala and Indian curries, often used with cumin as a thickener in a mixture called dhania jeera. Roasted coriander seeds, called dhania dal, can be eaten as a snack.
