Beetroot and Carrot Salad with Creamy Sesame Dressing
This beetroot and carrot salad with creamy sesame dressing is the perfect spring salad. Colourful and flavourful, it is goes beautifully with some BBQ or enjoyed as a refreshing dish by its own.
Ingredients
- 2 medium beetroots, peeled and shredded
- 2 medium carrots, peeled and shredded
- 1/4 cup fresh coriander, chopped
- 1/4 cup fresh mint leaves, chopped
- 2 tbsp toasted sesame seeds
- 1/4 cup thinly sliced red onion (optional)
- 1/2 cup roasted peanuts or cashews (optional, for added crunch)
For the dressing
- 4 tbsp Jimoto Foods Roasted Sesame Dressing
- 1 tbsp rice vinegar or apple cider vinegar
- 1 tbsp fresh lemon or lime juice
- 1 tsp honey or maple syrup
- 1 garlic clove, minced
Method
Prepare the Salad:
In a large mixing bowl, combine the shredded beetroot, shredded carrots, chopped coriander, and chopped mint. If using, add the thinly sliced red onion and roasted peanuts or cashews.
Make the Dressing:
In a small bowl, whisk together the Jimoto Roasted Sesame Dressing, rice vinegar, lemon juice, honey, and minced garlic.
Toss the Salad:
Pour the creamy sesame dressing over the shredded vegetables and fresh herbs. Toss everything together until well coated.
Garnish and Serve:
Sprinkle the toasted sesame seeds on top for added flavour and texture. Serve immediately as a refreshing side dish or let it chill in the refrigerator for 15-20 minutes to allow the flavours to meld.
